Yeast has the most important job in the home brewing process. There are two varieties which are divided into two major categories: lager and ale. Lager usually requires cold fermentation temperatures that is hard to maintain. However, ale can ferment well at room temperature or just below.
There are three major factors that will affect the health and the quality of fermentation. Make sure your temperature, oxygen, and cell count are at the right amounts otherwise it can adversely affect the taste of your brew.
